¼ cup vegetable oil
½ cup sugar
1 egg
1 tsp. almond extract
1 cup Mincemeat
1¾ cups all-purpose flour
1 tsp baking powder
½ tsp. salt
½ cup each chopped each red and green candied cherries

Directions:
Directions:
In a large bowl, beat oil and sugar until light. Beat in egg and almond extract. Stir in mincemeat. In small bowl, combine flour, baking powder and salt. Stir into egg mixture until blended. Stir in cherries. Drop by rounded teaspoonfuls onto parchment lined or lightly greased baking sheet. Bake in 350º oven for 12 to 14 minutes or until lightly browned and firm. Remove cookies to wire rack to cool completely.
