3 to 4 heads garlic
1 tbsp. Olive oil
1 tbsp. plus 1/2 tsp. kosher salt
Black pepper to taste
5 lbs. potatoes, peeled and cut into chunks
3/4 cup butter cut into, pieces
4 oz. cream cheese
2 cups fresh grated Parmesan cheese
1/2 cup half and half
1/4 cup heavy cream
1 cup fresh parsley, chopped

Roast Garlic: Preheat oven to 400º F. Cut the tops off the garlic heads. Place in pie plate, drizzle with olive oil and sprinkle with 1/2 tsp. salt and a bit of black pepper. Cover with foil and bake until golden and soft about 45 minutes.

Meanwhile boil the potatoes until tender. Drain and return to pot, mash. Add the butter, cream cheese, Parmesan cheese, half and half, cream, parsley, 1 tablespoon salt and pepper. Squeeze garlic out of skins and incorporate into potato mixture. Spoon into serving bowl to serve.
These can be made ahead and baked covered in the oven to reheat or in the microwave.
