3/4 C softened butter
3/4 C sugar
2 eggs
1 Tbsp vanilla
1 2/3 C flour (well packed)
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 C sour cream or plain/vanilla Greek yogurt
1 1/4 C mini chocolate chips coated in 1 Tbsp flour

Preheat oven to 375 and line or spray a muffin tin.
Cream together butter and sugar for 2 mins til light and fluffy. Add in eggs and vanilla and continue to cream for another 2 mins. Mixture should be fluffy.
In a separate bowl mix flour, baking powder, baking soda and salt.
Alternate adding dry ingredients and sour cream to the butter mixture. Make sure you start and end with the dry ingredients. Mix til combined, don’t over mix!
Fold in chocolate chips.
Fill muffin tins til 3/4 full and top with extra chocolate chips if desired.
Bake for 15-22 mins or until a toothpick comes out clean.

I ended up using a mixture of plain and vanilla Greek yogurt because that’s what I had on hand and I liked the result.
