Calamari/cuttlefish with greens Recipe

Ingredients:  
1 lb of calamari or cuttlefish
Milk, enough to cover
1 small spoonful of baking soda


1 onion, chopped
3 garlic, minced
1 tbsp peppercorn
2 tbsp red wine vinegar
1 bay leaf
1 tbsp tomato paste
2 tbsp EVOO
2 batches of escarole or spinach, cleaned and chopped

Directions:
Directions:
1. In a large bowl, mix milk and baking soda
Add fish & mix.
Refrigerate for at least 30 min

2. Strain the fish but don't rinse.

3. Put fish in a large pot, add onion, garlic, peppercorn, red wine vinegar and bay leaf
Partly cover and cook until all liquid evaporates
Add 1 tbsp tomato paste & mix.
Add EVOO and let it saute
Add water ~ ½ cup to start ( cuttlefish needs more water than calamari).
Cover and cook for about 15-20 minutes until done

4. Add greens, cook until greens are done
