Pilaf with Calamari or Cuttlefish Recipe

1 lb of calamari or cuttlefish
Milk, enough to cover
1 small spoonful of baking soda


1 onion, chopped
3 garlic, minced
1 tbsp peppercorn
2 tbsp red wine vinegar
1 bay leaf
1 tbsp tomato paste
2 tbsp EVOO
½ cup rice
salt as needed

Directions:
Directions:
1. In a large bowl mix milk and baking soda
Add fish & mix.
Refrigerate for at least 30 minutes.

2. Strain the fish but don't rinse.

3. Put fish in a large pot, add onion, garlic, peppercorn, red wine vinegar and bay leaf
Partly cover and cook until all liquid evaporates.
Add 1 tbsp tomato paste & mix.
Add EVOO and let it saute
Add water ~ 1 cup ( cuttle fish needs more water than calamari).
Cover and cook for about 15-20 min. Check to see if the fish is soft.

4. Add rice & parsley, add water if needed ( need about 1.5 cups of water).
Mix, cover, and cook until rice is done.
