1 ½ cups shredded cheese, we use mexican blend
4 teaspoons all-purpose flour
3 eggs
1 cup whole milk
¼ teaspoon salt
a sprinkle of pepper
¼ teaspoon ground dry mustard
1 (9 inch) unbaked pie crust
2 tablespoons chopped fresh parsley, for garnish

Filling options:
Ham and cheese
Add 1/2 cup cubed ham

Spinach and tomato
A small handful of fresh spinach. Add half a sliced tomato on top. It tastes great and look pleasing to the eye..

Other options include:
Bacon
Smoked sausage
Mushroom
Breakfast sausage
Cream cheese
Artichoke
Green pepper
Asparagus
Onion

Directions:
Directions:
Preheat oven to 400º.
In medium bowl, toss 4 teaspoons flour with the grated cheese. Sprinkle mixture into the pie shell. On top of cheese, add your fillings.

In medium bowl, whisk eggs, milk, and then add salt and mustard powder. Beat until smooth and pour over cheese and whatever you choose to fill it with.

Put foil around edge of crust to protect crust from burning.

Bake in the preheated oven for 60 minutes, or until filling is set and crust is golden brown.

I love this recipe because it's made with simple ingredients. No cream required, just milk. You can fill it with any filling you want. Ham and cheese, artichoke and onion, spinach and tomato. You choose! We use this recipe often for a weekend brunch.
