Crepe dough:
4 eggs
1 cup flour
¼ tsp. salt
1 cup milk
2 tbsp. vegetable oil
1 tbsp. sugar
1 tsp. vanilla

Filling:
8 oz. cottage cheese
1 egg yolk
¼ cup sugar
1 tsp. vanilla

OR you can use Nestle Quick chocolate mix for the filling

Mix all crepe dough ingredients until smooth and set aside for 30 min. Grease a 9-inch skillet lightly with oil or Pam. Heat medium-sized skillet and pour in about ¼ cup or less of the batter and tilt the skillet around so the batter spreads evenly across the bottom of the skillet. Adjust the amount of batter you use so that each crepe is very thin. Brown on both sides till they're completely set and getting a little brown.

Remove the crepes to a plate. You can place the crepes on top of each other till you're ready to fill. Mix the filling ingredients and spread about 2 tbsp. of the cheese filling on each crepe and roll up. Or use Nestle Quick chocolate mix for the filling.
