1 1/4 cups sugar
1/2 cup butter, softened
2 eggs
1 1/2 cups mashed ripe bananas (3 or 4 medium)
1/2 cup milk
1 tsp vanilla
2 1/2 cup all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup chopped nuts, if desired. Walnuts or pecans are perfect.

Chocolate chip and macadamia-nut banana bread:
Substitute one can of macadamia nuts instead of walnuts or pecans. You can add them halved or chopped. Add 1/2 cup chocolate chips at the end of recipe.

Preheat oven to 350º.
Grease bottom of two bread pans.
Mix sugar and butter in large bowl. Stir in eggs until well blended. Add mashed bananas, milk and vanilla. Beat until smooth.
Stir in remaining ingredients just until moistened, adding nuts at the very end.
Pour into pans.
Bake 1 hour to 1 hour and 15 minutes or until a butterknife is inserted into the center and comes out clean. Cool before slicing.
