1 pkg. lemon jello
½ c. boiling water
½ c. sugar
juice and rind of 1 lemon
½ c. butter
2½ c. graham cracker crumbs
½ c. icing sugar
1 can evaporated milk (385 ml.)

Directions:
Dissolve jello in boiling water. Add sugar, juice and grated lemon rind. Chill until partially set.

Melt butter and add crumbs and icing sugar. Mix and press into bottom of 9x13 in. pan.

Whip can of evaporated milk- very cold (place bowl and beaters in freezer for 10 minutes before beating) in a very large bowl until stiff (like meringue).

When jello mixture has begun to set, fold jello into whipped milk. Pour fluffy mixture over crumb base. Add a few crumbs on top to decorate. Refrigerate.
