1 lb ground beef
1 cup chopped onion
1 cup shredded carrots
1 cup diced celery
1 tsp dried basil
4 Tbsp butter or margarine, divided
5-6 cups chicken broth (I use Better than Bullion)
5 cups diced potatoes (peeled)
cup flour
16 oz Velveeta cheese cubed
3 cups milk
tsp salt
tsp pepper

Directions:
Directions:
In a large pot brown beef, drain, and set aside. In the same pot saute' onion, carrots, celery & basil in 1 Tbsp butter until vegetables are tender, about 10 minutes.

Add broth, potatoes, and beef. Bring to boil. Reduce heat, cover, and simmer for 10-12 minutes or until potatoes are tender.

In a small skillet melt remaining butter, add flour, cook and stir 3-5 minutes or until bubbly. Add to soup and bring to boil. Cook and stir for 2 minutes then reduce heat to low.

Add cheese, milk, salt, and pepper and stir until cheese melts. Remove from heat and serve.
