(2) 30 oz. cans stewed tomatoes,
slightly blended
1 small onion, chopped
1 anaheim pepper, chopped
3-4 green onions, chopped
fresh Cilantro, chopped
3 tsp. salt
2 tbsp. brown sugar
8 tbsp. hot pepper vinegar
½ tsp. dried cumin
1/8 tsp. garlic powder

Directions:

Mix all ingredients together in a non-reactive bowl; blend well. Serve with your favorite tortilla chips. Keeps well for at least two weeks. Makes about 2 quarts. 8 tbsp. of Hot Pepper vinegar will make a fairly mild salsa. If you prefer your salsa with a little more kick, simply add more Hot Pepper Vinegar.
