vegetable oil for frying
1/2 cup sugar
1 TBSP ground cinnamon
16.3 oz. can Pillsbury Grands! or similar canned biscuits

Directions:
Directions:
Pour 1 ½ inches of oil into medium high-sided saucepan. Heat over medium heat.
Mix sugar and cinnamon in a small bowl. Open can of biscuits. Cut each biscuit into quarters and roll each piece into a ball. Test a little piece of biscuit in oil to ensure it browns quickly, then working in batches so as not to crowd them in the pan, deep-fry the dough balls until golden brown on all sides, turning them with a fork. Use a slotted spoon to remove the balls from the oil, then put them on paper towels to absorb any extra grease. A few minutes later, roll the balls in cinnamon-sugar to coat. Eat as soon a cool enough to do so.

An option is to roll beignets in powdered sugar rather than cinnamon-sugar mix.
