Chicken drummets
Andouille sausage
Crab legs and/or shrimp (optional)
Onion & Bell pepper (will cook away)

Cut frozen okra / 2 packages (will cook away)
Vegetable oil

Directions:
Directions:
Boil chicken with bell pepper and onion
Sauté okra w/ 2 tbs. oil / remove slime / Add to stock
Slice & fry sausage to remove fat / Add to stock
Make a rue for gravy by heating ˝ cup of oil on high (not smoking). Add about 1 cup(+) flour, stirring constantly, so as not to burn. Brown until it is about my color, then add to stock quickly & very carefully (the flour mixture may splatter when it hits the water).
Salt & pepper to taste.
When chicken is tender, add seafood (optional)
Simmer about 30 minutes, add file’ to taste.
Serve over rice.
May add Pace chunky medium salsa.
