Ingredients: Eggs- Oh so many ways to cook them here are 10 ideas 1. Soft boiled for 6 minutes in soft simmer water 2. Hard boiled- place in a single layer in a pan and cover with water by an inch or two, cover with lid and bring to a full rolling boil and then turn off heat, let sit 10 minutes, bring to a boil again and then immediately drain and place in ice-water. This prevents the gray ring and over cooking. 3. Over easy- nick-named "Leaky Eggs" cook on low heat with a little butter, flip and serve 4. Dad's eggs-(Lee) cook a minute then put a little water in pan and covered for a sunny side up. 5. Poached- boil water add a dash of vinegar or lemon juice, it will set the egg white, break the egg into a cup, spin the boiling water with a whisk to make a whirlpool. Gently drop whole egg into whirl pool. As it moves up to top of water it is done. 6. Eggs benedict- 1 minute Hollandaise Sauce- 1 egg yolk, 1 tsp. water,1 tsp. lemon juice- place in a container that will just fit an immersion blender. Melt 1 cube of butter in a glass measuring cup. Start running your immersion blender in egg yolk and slowly add the melted butter for about 30 seconds. Wa La! Layer, English muffin, bacon, poached egg and then top with hollandaise and garnish with avocado. enjoy! 7. Scrambled with cheese, ham etc. 8. Deviled- I mix -Mayonnaise, mustard, seasoned salt and pepper, top with paprika 9. Omelet with peppers, spinach, onion and cheese 10.German Baby Pancakes- 3 eggs, ⅓ c. milk, ⅓ flour, dash of salt and vanilla- Blend ingredients and put in a preheated cast iron pan or small baking dish with a little melted butter in the bottom, Bake in a hot oven- 425º for 10-12 minutes depending on depth of pan. Serve with powdered sugar and a squeeze of lemon. Also good with syrup, any jam or fruit.

Notes: Jen's family named soft eggs "Leaky" eggs. They have been a family favorite but some of the in-laws just cringe. Unless it bounces on your plate it is not done enough. To each his own. But we all love eggs. No matter how you cook them- Eggs are a great start in the morning or for a snack with plenty of protein to last throughout the morning. Serve with sausage, bacon, hash browns, pico, Cholula or other hot sauce.
