1/2 c. butter, melted
1 c. flour
1/2 c. powdered sugar
1/2 tsp. salt
Filling:
1 c. white sugar
2 eggs
2 tsp. grated lemon peel
1 tsp. baking powder
1/4 c. lemon juice (or more)
2 drops yellow food coloring

Directions:

Mix flour, butter and powdered sugar until well blended with fork or pastry mixer. Press into an ungreased 8 x 8 pan building up edges a little bit. Bake for 15 minutes at 350º. Meanwhile, beat eggs until frothy and then beat in remaining ingredients. Continue beating until light and fluffy for about 2-3 minutes. Pour over baked crust. Bake until no indention remains in the center, about 20 minutes. Cool. Sprinkle with a little powdered sugar.
