2 c. flour
2 c. sugar
1/2 tsp. salt
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. cloves
4 beaten eggs
1-1/2 cup oil or
3/4 c. oil & 3/4 c. applesauce
3 c. finely grated carrots
Cream cheese Frosting:
1/2 cube butter melted
4 oz. cream cheese softened
1 tsp. vanilla
1 lb. powdered sugar (about)

Beat eggs. Add oil and blend. Sift and add dry ingredients all at once. Add carrots. Blend and pour in a greased and floured 9 X 13" cake pan or 2 round cake pans. Bake at 350º for 30-40 minutes or until done. Frost when cool. optional: Add 1/2 c. chopped nuts to batter, walnut or pecans are good.

Frosting: stir first 4 ingredients into a mixing bowl and add powdered sugar to spreading consistency.
