1 baked pie shell
1¼ c. sugar
½ c. cake flour
dash of salt
1½ c. water
3 egg yolks, slightly beaten
½ c. lemon juice
1 tbsp. grated lemon rind

Directions:
Directions:
Combine sugar, flour and salt in the top of a double boiler. Add water and egg yolks. Mix thoroughly. Place over boiling water and cook for 10 minutes, stirring constantly. Remove from boiling water and add lemon juice and rind. Let cool. Pour into a baked pie shell and top with meringue made of three egg whites and 6 tbsp. sugar. Place in oven to brown slightly. (Note: 2 tbsp. flour and 2 tbsp. corn starch can be used in place of cake flour. A drop of yellow food coloring may be added to give filling a deeper color.)
