6 to 8 medium apples (about 2¼ lbs) cored and dicedto about ½ inch
2 Tbsp lemon juice (1 lemon)
1½ tsp vanilla extract
1 cup brown sugar
1 Tbsp cinnamon
1 tsp ginger
½ tsp nutmeg
¾ tsp sea salt
½ cup granulated sugar
⅓ cup flour

Unsalted butter or non-stick cooking spray
2 cups flour
⅓ cup brown sugar
1 Tbsp cinnamon
1½ tsp baking powder
½ tsp sea salt
6 Tbsp cold unsalted butter cut into ½ inch cubes
½ cup cold buttermilk
1 large egg, slightly beaten
1 tsp vanilla extract
Turbinado sugar

1. Make the filling: In a large pot, melt butter over medium heat. Add apples, tossing to coat in butter. Add lemon juice, vanilla, brown sugar, cinnamon, ginger, nutmeg and salt and stir to combine. Continue to cook, stirring occasionally, until the sugar dissolves and the apples start to soften, 5 to 6 minutes.
2. In a small bowl, whisk together granulated sugar and flour. Add to the pot and stir well to combine. Stir constantly until the mixture thickens, 2 to 3 minutes. Filling may be made ahead and kept refrigerated for up to 3 days.
3. Lightly grease a 9 by 13 inch pan with butter or non-stick spray, and scoop the filling into the pan.
4. Prepare the cobbler: In a medium bowl, whisk the flour, brown sugar, cinnamon, baking powder and salt together to combine. Add the butter and toss well until each piece is coated with flour. Cut the butter into the flour until the mixture resembles coarse meal.
5. Make a well in the centre of the bowl, then add the buttermilk, slightly beaten egg and vanilla. Stir all the ingredients together until well-combined.
6. Drop the batter be spoonfuls all over the cobbler. Some filling should still be visible. Generously sprinkle turbinado sugar over the surface.
7. Bake in a 375ºF oven until topping is golden brown, 40 to 45 minutes. Cool at least 10 minutes before serving warm.

Reduce buttermilk by 2 Tbsp for a crumblier topping, or increase by 2 Tbsp to make it softer and more cake like.
