25 Roma tomatoes (approx)
8 celery stalks
2 large onions
2 green peppers
1 red pepper
1 yellow pepper
2 Jalapenos
¼ cup pickling salt
½ cup white sugar
2 tsp mustard seeds
1 T chili pepper flakes
¾ tsp cayenne pepper
1 cup white vinegar
1 - 369ml can tomato paste
½ T Tabasco sauce

Prepare tomatoes:
Blanch 20-30 seconds
Put directly into an ice water bath
Remove skin
Chop and let sit in a strainer for several hours

Once tomatoes have been strained add all ingredients to a large pot

Cook on low 1 - 1.5 hours *Stir Often to avoid burning at the bottom*

Put in pint jars then process in a hot water bath for 15 minutes
