Measure and sift together:
1 C. Sifted Cake Flour
3/4 C + 2 tbsp. Sugar
Measure into large mixing bowl:
1 1/2 C Egg Whites (about 12)
1 1/2 tsp. Cream of Tartar
1/4 tsp. Salt
Beat until foamy, gradually add:
3/4 C. Sugar
Continue beating until meringue holds stiff peaks.
Fold in:
1 1/2 tsp. Vanilla
1/2 tsp. Almond Flavoring

Fold in gently sugar flour mixture just until it disappears. Push batter onto ungreased pan (tube pan preferred).Bake at 375 for 30-35 minutes or until top springs back when lightly touched. Invert on a funnel. Let hang until cold.
