6 Tbs butter
2/3 cup packed brown sugar
2 Tbs vegetable oil
½ cup sour cream
2 eggs
1 tsp vanilla
1 medium baking apple, cored & sliced
1 medium pear, cored & sliced
1 1/3 cups flour
1 cup sugar
½ tsp salt
1¼ tsp baking soda
2 tsp cinnamon

Preheat oven to 350º

Put brown sugar & butter into a 10” cast iron skillet
Put into the oven for five minutes until butter has melted.
Remove from oven & whisk until well blended.
Arrange prepared fruit in skillet on top of brown sugar mixture.

In a large bowl: whisk together dry ingredients.
In a medium bowl: whisk together oil, eggs, sour cream and vanilla

Stir wet ingredients into dry ingredients.
Blend well, but DO NOT OVER MIX.
Place batter over fruit in skillet

Bake for 30 minutes; place on a wire rack to cool for 10 minutes. Gently invert cake onto a serving plate.

Serve warm with whipped cream or ice cream.

Preparation time 45 minutes. Serves 12.
