1 small onion, chopped
3-4 cloves garlic, smashed
¼ lb butter
2 cups strong chicken/veg stock, heated
3 heads broccoli
1 cup half & half
Milk to thin
Kosher salt to taste

Directions:
Directions:
Melt butter in a stockpot over low heat
Add onion & garlic & sweat it out!
Add chopped broccoli.
Cook, until broccoli is just fork tender.
Stir in stock.

Pureé with blender and return to pot
(or, use an immersion blender)

Add half-and-half, then milk, to reach desired consistency.
Season to taste.

Preparation time 30 minutes. Serves 6.

This recipe comes from Debbie Vernon DiMicco, an English and French teacher at George School. She is a George School graduate, who broke the Title 9 barriers before they existed by becoming the first girl on the track team.

Each March, Debbie travels to Guebbulier, France in an exchange program, taking about sixteen students with her. It's sad to think that this glorious trip couldn't happen this year with the pandemic. Hopefully, next year!
