½ medium head cauliflower
1 large egg, lightly beaten
½ cup onion, finely chopped
1 cup cheddar cheese, shredded
3 Tbs cornstarch
Kosher salt
Freshly ground black pepper
1 Tbs extra-virgin olive oil

Garnish:
3 Tbs sour cream or creme fraiche
Fresh Chives, Dill or Marjoram, very finely chopped
1½ Tbs sesame seeds, toasted (a mix of black & white is fun)

Directions:

In a small mixing bowl, mix together several heaping tablespoons of sour cream and one of the herbs

Grate cauliflower on a box grater until shredded.
(Alternatively, you can chop using a food processor.)

Transfer to a medium bowl, and stir in egg, onion, cheddar and cornstarch.

Season with salt and pepper

Allow to rest for 2 minutes, giving time for the cornstarch to absorb the liquid.

In a large skillet over medium-high heat, heat oil.

Add spoonfuls of cauliflower mixture and shape into patties.

Cook each patty until brown and crispy, about 5 minutes per side.

Place patties on a platter and sprinkle w/toasted sesame seeds

Serve with a small bowl of the flavored sour cream

Preparation time 45 minutes. Serves 6-10
