Ginger Mousse Recipe

1 cup heavy cream
1½ tsp freshly grated ginger
2 tsp dried ginger
2 large egg white
¼ cup sugar
3 oz white chocolate

Candied ginger, for garnish

Preparation:

Over medium heat, combine heavy cream with both gingers in a medium saucepan; bring to a simmer.

Simmer for 3 to 5 minutes

Remove from heat & cover; when cool enough, refrigerate overnight

Strain cleanly & discard ginger

Next Day:

Beat ginger-infused cream until soft peaks form; set aside

In a large cold glass bowl whip egg whites until soft peaks form

Gradually add the sugar while still whipping until peaks firm.

In a double boiler or microwave melt chocolate

Using a whisk, fold chocolate into egg whites

When almost incorporated, fold in the whip cream

Pipe into serving containers & refrigerate for an hour or until set.

45 minutes to prepare, plus overnight time. Serves 4
