1.5 pounds of lean ground beef
salt and pepper
1 small onion, diced
8 - 10 flour tortillas
3 cups grated cheese, Cheddar and Monterey Jack mixed
1 bunch of green onions, sliced thin
1 small can sliced black olives
1 large can red enchilada sauce

Directions:
Directions:
Heat oven to 350º
Grease a 9x13" baking pan with cooking spray. Set aside
Cook the ground beef in a large skillet using a spatula to break up the beef into small pieces as it cooks. After it gets brown, add 1/2 cup water, cover and simmer for 20 minutes without lifting lid. Add onion to the pan, cook for 5 minutes longer. Remove grease if necessary.
Set up assembly line including: tortillas, enchilada sauce, ground beef, olives, green onions and cheese. Put a spoon full of sauce on dinner plate, place tortilla on top, add a little more sauce then add the other ingredients. Roll up the tortilla and put into baking pan.
Sprinkle remaining cheese and any left over olives and green onions on top.
Bake uncovered for 20-30 minutes.
