1/4 cup peanut or vegetable oil
2 large eggs beaten
2 teaspoons finely grated ginger
1 garlic clove finely chopped
1/4 teaspoon dried hot pepper flakes
1 16 oz. bag coleslaw mix
1/4 cup water
2 Tablespoons soy sauce
2 teaspoons Asian sesame oil
3 Tablespoons Hoisin sauce
1 bunch scallions chopped
sprouts if desired
8 (6 inch flour) tortillas
2 1/2 to 3 cups coursely chopped Rotisserie chicken

Directions:
Directions:
Heat 1 Tablespoon oil until hot but not smoking. Cook eggs until just cooked. Transfer scrambled eggs to a plate. Add remaining oil and cook ginger, garlic and pepper flakes. Add coleslaw mix and 2 Tbsp water. Cook until cabbage wilted about 5 minutes. Mix soy, sesame oil, Hoisin,and 2 Tbsp water in small bowl. Add to coleslaw mixture, add eggs and scallions.

Microwave tortilla. Spread Hoisin on tortillas,and add chicken mixture as well as additional scallions or sprouts.
