2 pounds bulk hot or sweet Italian sausage
1 ½ cups green sweet pepper strips
1 cup sliced yellow onion
4 cloves garlic, minced
1 14.5 ounces can fire-roasted diced tomatoes, undrained
1 14.5 ounces can crushed tomatoes
1 tablespoon dried Italian seasoning, crushed
1 tablespoon balsamic vinegar
¼ – 0.5 teaspoon crushed red pepper
¼ teaspoon salt

Step 1
In a 12-inch skillet cook sausage, sweet pepper, onion, and garlic over medium heat until meat is browned; drain off fat.

Step 2
Transfer meat mixture to a 4- to 5-qt. slow cooker. Stir in the next six ingredients (through salt). Cover and cook on low 4 hours or high 2 hours.

Step 3
After toting, keep warm, covered, on warm or low up to 2 hours if desired. Fill rolls with meat mixture and top with cheese.
