1 lb. Owen's regular sausage
½ cup chopped onion
2 ½ cups shredded potatoes
¾ cup Bisquick
1 ½ cups skim milk
3 eggs
1/2 tsp salt
1/4 tsp black pepper
1 cup cheddar cheese, grated

Directions:
Directions:
Spray 8" square baking dish with PAM.
Cook sausage and onion until meat is browned.
Mix in potatoes.
Smooth into baking dish.
Beat Bisquick, milk, eggs, salt ,and pepper with wire whisk until smooth.
Pour over sausage mixture.
Bake for 25 minutes at 400º.
Top with cheese and bake 5 - 8 minutes more.
Freezes well.
