1 Medium Head Cauliflower into pieces
1 shredded medium carrot
¼c chopped celery
2½c water
2 cubes chicken bouillon
3tbsp butter
3tbsp flour
¾tsp salt
⅛tsp pepper
2c milk
1c shredded cheddar cheese
hot pepper sauce to liking

Directions:

In a Dutch oven combine the cauliflower, carrot, celery, water and bouillon. Bring to a boil. Reduce heat and cover. Simmer 12-15 minutes or until tender. Do not drain.

In a large saucepan, melt butter. stir in flour, salt and pepper until smooth. Gradually add the milk. Bring to a boil over medium heat, cook and stir for two minutes or until thickened. Reduce heat. Stir in the cheese until melted. Add hot sauce to taste. Stir into cauliflower mixture.2
