1 1/4 c. Fiber One cereal
1 1/3 c. Milk
1/2 t. Vanilla
1/4 c. Olive or Vegetable Oil
1 Egg
1 1/4 c. Flour
1/2 c. Brown Sugar
3 t. Baking Powder
1/4 t. Salt
1/4 t. Cinnamon

Heat oven to 400º. Spray bottoms of a muffin tin or use liners. Crush cereal into fine crumbs. In a medium bowl, stir the crushed cereal, milk, and vanilla until well mixed. Let stand about 5 minutes or until cereal has softened. Beat in the oil and egg with a fork. In another bowl, stir the flour, brown sugar, baking powder, salt and cinnamon until well mixed. Stir flour mixture into cereal mixture just until flour is moistened. Batter will be lumpy. Spoon the batter into muffin tins. Bake 20-25 minutes.

I never thought I would like bran muffins, but these are delicious. I highly recommend them. You can add raisins if you like.
