2 cps bread flour
2 Tbsp sugar
2 cps lukewarm water
1 pkg dry yeast


Feeding Starter (every 5-7 days)

3 Tbsp instant potatoes
3/4 cp sugar
1 cup bread flour
1 cup starter
1 cup warm water

Stir sugar into water. Sprinkle yeast over water. Let stand for 10 minutes.
Add flour and beat until smooth. Cover and let stand 36 hours in a warm place (80-85 degrees).
Beat again and put into refrigerator.
At this point, you can use one cup to make bread.

Feeding Starter

Mix flour, potatoes, and sugar well. Add starter and water in a large glass bowl. Let stand on counter all day (8 - 12 hours). Mix well. This should make about 3 cups of starter. Use one cup to make bread.

At this point you can give away a cup and keep one for starter to feed or you can freeze one of both remaining cups. To freeze, put 1 cup in a zip lock sandwich bag and then put them in a larger freezer bag. You can then take them out for a few hours to bring to room temperature, at which time you can feed it and get three more cups or you can use it to make bread. You can cut one corner of the bag and squeeze out the starter. This way you don't lose any.
