Beef Enchiladas Recipe

1 lb ground beef
4 flour tortilla (8-10 inch)
1 can enchilada sauce (red or green)
1 pkg taco seasoning
8 oz shredded cheddar cheese
1 small can chopped green chilis (optional)

Directions:
Directions:
Prepare 8 x 8 baking pan by spraying with non-stick spray such as Pam. Pour approximately 1/4 of enchilada sauce in bottom of pan.

Brown ground beef and break into small pieces. Add taco seasoning (using 1/2 of the water on the package instructions) and chilis. Spoon ground beef mixture on to tortillas, folding in the ends and rolling the shut. Place in pan, seam side down. Cover with remaining enchilada sauce. Spread cheese on top.

Cover pan with foil and bake at 350º for 30 minutes. Remove foil for the last 10 minutes of baking.

Serve with sour cream and salsa.

This recipe is great for freezing. Prepare enchiladas up to the point of baking. Wrap tightly in foil. When ready bake for 45 minutes.
