2-4 cups, cooked shredded chicken
8 cups chicken broth- I've even used bullion and water too
1 onion, chopped
3 cloves garlic
1 tsp cumin
1 tsp dried oregano
¼-½ tsp. chili powder
1 tsp. salt
¼ tsp black pepper
1 bay leaf
2 Tbs dried parsley
3 Tbs chicken broth powder (I only do equivalent broth to the water I add)
1 quart canned tomatoes ( just use a regular size can of diced tomatoes)
1 14oz. can green enchilada sauce
1 can diced green chilies
1 can black beans, drained
1 can corn
2-4 cups grated zucchini
2-4 cups grated carrots
(I put my zucchini and carrots in the food processor for kids who don't like chunks of veggies)

Directions:
Can cook in a crock pot or on stovetop. Sauce onions and garlic, then add ingredients and bring to a boil. Add cooked chicken last and simmer until cooked and flavors blended. Serve over tortilla chips and top with sour cream, cilantro, avocado and grated cheese.
Olives are good too as a topping.
