Spinach Salad

8 oz. fresh spinach, washed, dried
stems and thick veins removed
4 oz. fresh mushrooms, sliced
4 strips crisp bacon, crumbled*
(reserve drippings for dressing)
1/4 c. golden raisins
1 c. seasoned croutons

*cut bacon into small pieces and cook in a skillet over low heat, stirring often, until drippings are rendered and bacon is crisp.

Hot Bacon Dressing

1/4 c. bacon drippings
1/4 c. red wine vinegar
1/4 c. light mayonnaise
1/4 c. sugar

Spinach Salad

1. In a large bowl, place spinach, mushrooms,
bacon and raisins.

2. Just before serving, heat Hot Bacon Dressing
and pour over salad, tossing to evenly coat salad.

3. Sprinkle croutons over salad and serve.

Hot Bacon Dressing

1. Pour bacon drippings into 2 cup glass measuring
cup or bowl. Add vinegar, mayonnaise and sugar.
Whisk to blend ingredients.

2. Just before serving, microwave on high for
2 minutes.
