1 1/2 Tbs. unsalted butter
1 1/2 Tbs. olive oil
1 lg. yellow onion, finely chopped
1/2 small red pepper, finely chopped
1/2 small green pepper, finely chopped
2 lbs. small white or red potatoes, peeled
and cut into 1/2” pieces
salt and pepper
chopped fresh parsley

Directions:
Directions:
1. In a large frying pan, melt 1/2 Tbs. butter
and 1/2 Tbs. olive oil. Sauté onion until
golden brown.

2. Add red and green pepper; sauté 5 minutes
longer. Transfer to a bowl.

3. Add 1/2 Tbs. butter and olive oil to pan. Add
half of the potatoes and brown on all sides 5-7
minutes. Transfer to bowl with onion mixture.

4. Add remaining butter and oil to pan along with
remaining potatoes. Brown on all sides.

5. Return mixture from bowl to pan; heat through.

6. Season with salt and pepper. Add parsley and mix.
