1 package of phyllo dough
2 x 10oz. package of frozen chopped spinach, thawed and drained
1 cup of green onions chopped
4 cloves of garlic minced
1 cup of feta
½ cup of ricotta cheese
2 eggs beaten
¼ cup of fresh dill chopped
¼ cup of fresh parsley chopped
1 t of both S&P
1 T of lemon juice
1 t nutmeg
1T dried oregeno
½ cup grated parmesan
2 T of toasted sesame seeds

In a large bowl add the drained spinach (make sure you squeeze all of the water out), add all of the rest of the ingredients and mix together really well.

Follow the instructions for keeping the phyllo moist. Spray phyllo with cooking spray and lay another on top, repeat so you have a total of three sheets. Using a pizza cutter cut the phyllo lengthwise in half. Place spinach mixture at one end of the strip and fold to make triangle (look at back of package of phyllo dough it shows a diagram!) keep folding back and forth the triangle until pastry used up. Make sure its tight and sealed.


Spray triangle again and sprinkle with parmesan and sesame seeds. Bake at 425º F for 20 minutes.
