French Country Beef Stew Recipe

2 tsp extra virgin olive oil
4 slices turkey bacon, coarsely chopped
1 1/2 cups finely chopped onion
1 1/2 cups diced carrots
1 cup diced celery
3 cups reduced-sodium beef broth
2 cups dry red wine (Merlot or Zinfandel)
1 tsp fresh thyme leaves
2 bay leaves
2 2 1/2 inch-long strips of orange peel
3-4 pounds of stew beef
1/2 cup chopped parsley

Directions:
Directions:
Heat oil in a 4-5 quart pot over medium-high heat.

Add bacon and cook, stirring often, until lightly browned, 3-5 minutes.

Add onions, carrots, and celery and cook, stirring often, until vegetables are softened and lightly browned, 8-10 minutes.

Add broth, wine, thyme, bay leaves and orange strips. Bring to a boil.

Rinse the stew beef and place it in a 5-6 quart slow cooker and turn heat to high.

Carefully pour the hot vegetable mixture over the beef.

Cover and cook until the beef is tender and breaking apart, 4-6 hours.

To serve, discard the orange strips and bay leaves. Ladle into bowls and sprinkle with parsley.

Preparation time: 35 minutes with 4-6 hours of cooking. Serves 8.

When slow-cooker season (aka football season) rolls around this beef stew is one of the first meals we make.

I add some cornstarch to thicken the sauce before serving and we usually serve it over barley or egg noodles.

I've also been known to go heavy on the wine...up to a full bottle depending on how the Patriots are playing.

This is a real crowd-pleaser and super-easy to prepare.

Plus it makes the house smell amazing!
