1 (16 oz.) pkg. dried green split peas
2 3/4 quarts water
4 small hot peppers
3 medium onions, chopped
2 medium carrots, diced
2 bay leaves
1 large ham hock
1/4 c. chopped celery leaves
2 Tbs. chopped parsley

Directions:
Directions:
1. Sort and wash peas; place in Dutch oven.
Add water, cover and bring to a boil. Cook 2 minutes.
Remove from heat and let stand 1 hour.

2. Add remaining ingredients to peas. Bring
to a boil; cover, reduce heat and simmer 1
hour.

3. Remove ham hock, peppers and bay leaves.

4. Cut ham from hock and chop; add to peas.

5. If desired, spoon mixture into container of an
electric blender and process until smooth.

Pop loved split pea soup - he always made it from the bone of leftover ham we would have at Easter or any company dinner.
