1 large container pre-cut butternut squash (Costco and Trader Joe's both carry - Costco's is bigger and is organic)
2 to 3 tablespoons olive oil
1/2 teaspoon dried Rosemary
8 to 12 oz. crumbled goat cheese
1/4 to 1/3 cup dried cranberries
1/4 to 1/3 cup toasted pumpkin seeds
Drizzle of balsamic reduction
Salt and Pepper to taste

Directions:
Preheat grill or oven to 425º. Toss butternut squash cubes with olive oil, salt and pepper. Grill or oven roast, turning to brown all sides, until tender. Remove from heat.
Place cooked squash in serving bowl, layer with other ingredients except balsamic - toss lightly. Drizzle top with balsamic reduction. Can be served room temperature.

I made this one up!! Can substitute feta for goat cheese, toasted pine nuts for pumpkin seeds and sage or thyme for rosemary. Can also cook separately some lentils and add to the mix for additional protein.
