4 T Olive Oil
16 oz. Cherry Tomatoes, sliced in half
2 Garlic cloves, thinly sliced
1 T Fresh Thyme - chopped
3 T Brown Sugar
Salt and Pepper to taste

4 oz. Burrata Cheese
1/2 C All purpose flour, seasoned with salt and pepper
1 Egg beaten
1/2C Panko bread crumbs

4 C Micro greens
1/4C Grated Parmigiano Reggiano

Cherry Tomoatoes
1. In a frying pan, heat olive oil, over medium heat. Add garlic and cook until soft, Add thyme, tomatoes, brown sugar and cook covered for 10 minutes until tomatoes are softened.
2. Remove lid, and cook for another 5 minutes until most of the liquid is reduced. Remove from heat and allow to cool to room temperature.

Burrata
1. Prepare shallow dishes, one with seasoned flour, 1 with beaten egg and 1 with Panko.
2. Roll Burrata in flour, dip in egg and then roll in Panko bread crumbs. Repeat - dip win flour, egg and Panko again. The burrata is very delicate and needs a think coating to avoid breaking up when cooking.
3. Fry coated Burrata in olive oil at medium temperature until golden brown. Remove with slotted spoon

Salad
1. Place the greens on a large plate, centre the warm Burrata on the middle, and spoon cherry tomatoes around the base of the Burrata.
2. Sprinkle tomatoes with Parmigiano Reggiano.

This is really good - we have been duplicate a burrata side dish we had at an Italian restaurant on Cambie. This is not exactly the same - but it is a great replacement.
