2 C Arugula lettuce
2 Nectarines cut into segments
2 T Red Onion - thinly sliced
1 Large Ball of Burrata, at room temperature (or 4 small balls)
2 T Toasted Pine Nuts
4 T Torn, fresh Basil leaves
4 Slices Prosciutto - cut into smaller pieces

Dressing
1/2 C Olive Oil
1/4 C Balsamic Vinegar - we use Black Cherry
1 t Salt
1 t. Black Pepper

Directions:

Salad
1. Combine all of the ingredients except the prosciutto in a large stainless steel bowl.
2. Add dressing and mix well
3. Top with prosciutto and serve

Dressing
1. Combine all ingredients in a jar, seal and shake to combine.

The dressing will keep in an airtight container for up to 7 days.

Jan discovered this recipe in the Vancouver Sun. Originally it was a peach salad - but the nectarines seem firmer and better suited. It is really good.
