1 - 4 lb Sirloin or Round Roast
1/4 C Extra Virgin Olive Oil
3 Cloves Garlic
1 T Chopped fresh Rosemary
1 T Chopped fresh Thyme
1 t Kosher Salt
1 t. Freshly ground Peppe

Directions:
Directions:
1. Preheat oven to 450º. In a small bowl, combine oil, garlic, rosemary, thyme, salt and pepper. Rub all over roast.
2. Place roast in roasting pan fitted with roasting rack. Roast for 15 min., then reduce heat to 325º and roast 1 hour 45 min. more for medium or 2 hours for medium well done.
3. Remove from oven and let rest 15 to 30 minutes before carving and serving.
