10 medium carrots diagonally cut into 1" slices
2 T brown sugar
2 t cornstarch
½ t ground ginger
¼ t salt
½ cup orange juice
¼ cup butter
1 T parsley

Directions:
Directions:
Cook carrots in boiling salted water until tender but crisp. In a separate pot, combine sugar, cornstarch, ginger and salt. Add orange juice and cook stirring constantly until thickened, boiling for 1 minute.

Stir in butter and remove from heat. Pour over hot, drained carrots, add parsley and toss gently to coat evenly.
