4 large russet baker potatoes
4 green onions thinly sliced
½ cup cooked and chopped bacon or buy pre bought 'bacon bits'
1 to 1 ½ cups of mixed grated cheese, (cheddar/mozza or whatever you have on hand)
Sour cream

Directions:
Directions:
Heat oven to 400 and poke a couple of holes in your potatoes to let out steam while cooking. Cook for about an hour until a sharp knife slides in easily. Cool them taters!

Cut potatoes in half and scoop out the potatoe (save it for later to make mash pots)
Then cut the half potatoe in half again so you get 4 skins out of one potatoe.

Liberally sprinkle cheese mixture over potatoes then the bacon and top with green onions.

Place on parchment lined cookie sheet and bake at 400º F until cheese is melted and edges of potatoes are golden.

Place sour cream in little bowl for dipping.
