Peppercorn Cream Beef Tenderloin Recipe

Ingredients: 1 T olive oil 2 6-8 ounce beef tenderloin steaks 3 T brandy or 3 T Bourbon 1-2 cloves of minced garlic 1 tsp crushed multicolored peppercorns 1/2 tsp dried oregano 1/4 tsp salt 2/3 cup whipping cream 1 1/2 T sour cream

Directions:Heat olive oil in a medium skillet over high heat.
Sprinkle tenderloin steaks with salt and pepper.
Sear tenderloin steaks on both sides in skillet. Remove from skillet and place on a rack in a broiler pan.
Broil 4-5 inches from heat for 4-6 minutes per side or until meat thermometer registers 160 degrees (for medium).
Add brandy or bourbon to drippings in skillet; bring to a boil over medium heat, and deglaze pan scraping browned bits that cling to the bottom. Add minced garlic, peppercorns, oregano, and salt. Cook for 1 minute.
Add whipping cream, bring to a boil and cook for 6-7 minutes or until sauce is reduced my half.
Remove from heat and whisk in sour cream. Serve over steaks with butter noodles or baked potatoes.
Prep time 40-50 minutes. Serves 2 |
