¼ cup flour
s&p
6 lamb shanks
⅓ cup olive oil
3 T butter
2 large carrots, peeled and sliced on the diagonal
1 large onion, diced
1 cup button mushrooms
2 stalks of celery sliced
1 T chopped garlic
2 bay leaves crushed
1 T dried Marjoram
1 T dried basil
Grated rind of 1 lemon
1 cup chopped parsley
1 tin of italian plum tomatoes, drained & coarsely
3 cups beef broth
2 cups red wine

Directions:
Directions:
Combine flour, s&p in a medium bowl and mix, toss lamb shanks until well covered.

Heat oil in large skillet and brown lamb on all sides. Remove lamb from pan and reduce heat and add butter, carrots, onion, celery, mushrooms, garlic, bay leaves, marjoram, basil, parsley and lemon rind. Sauté for 5 minutes and add wine and continue cooking for 5 minutes more.

Stir in tomatoes and broth. Place lamb in a casserole with the sauce and bake covered at 325º F for 2 hours or until tender and lamb is ready to fall off the bone.

Serve with mash potatoes! Serves 6
