2 T. Olive Oil
1/3 c. Flour
3/4 c. Onion diced
1/2 c. Carrots diced
1/2 c. Celery diced
1/4 t. Salt coarse
1/4 t. Black Pepper ground
4 c. Chicken Broth
2c. Half and Half
1 1/2 c. Chicken shredded
1 pkg. Potato Gnocchi
3 c. Fresh Baby Spinach
1 T. fresh Basil chopped
Parmesan cheese grated

In a large soup pot heat butter and oil. Add onion, carrots, celery, and garlic. Season with salt and pepper. Cook until tender over medium heat for 5 minutes. Sprinkle the flour into the pot and stir into the vegetables. Cook 3 minutes stirring often. Stir in the chicken broth followed by the half and half. Add cooked chicken and bring to a simmer for 20 minutes. Cook gnocchi separately according to the package directions. Add to the soup along with the spinach. Simmer until spinach is wilted. Stir in basil. Serve with grated cheese.

This soup is amazing. It seems like a lot of work, but really it is simple and delicious. It tastes just like the Olive Garden's version. I got the recipe from the Cinnamon Spice and Everything Nice blog.
