2 pints cherry tomatoes, or yellow and red mix
4 sprigs thyme
4 garlic cloves, mashed
1/4 cup extra virgin olive oil
Kosher salt
8 oz. burrata
Country style or French bread, brushed with olive oil, toasted in oven

Directions:
Directions:
Preheat oved to 350º. Toss tomatoes, thyme, garlic and oil on a rimmed baking sheet and season with kosher salt. Spread out on a single layer and roast until tomatoes are bursting and lightly browned, 40-45 minutes; let cool.

Arrange torn up burrata on a platter and spoon warm tomato mixture over; sprinkle with sea salt. Serve with toasted bread for spreading and soaking up all the juices!

DO AHEAD:
Tomatoes can be roasted one day ahead. Cover and chill. Gently reheat.
1 hour of preparation time and serves 4.

This has all the goodness we needed during our first gathering of a few friends during the pandemic in the middle of the summer.

This appetizer was followed up with steaks and corn on the cob for a perfect evening!
