2 C gluten free flour
1 Tsp baking powder
½ C cold butter
2 large eggs, room temp, beaten
3 Tab 2% milk
5 C sliced fresh rhubarb or frozen, thawed
1 3 oz. pkg. strawberry geletin.

Topping:
1 C sugar
1 C gluten free flour
½ C cold butter

Directions:
Directions:
In a large bowl, combine flour and baking powder. Cut in butter until mix resembles coarse crumbs.

Stir in eggs and milk just until moistened.

Press into the bottom of a 15 x 10 x 1" baking pan coated with cooking spray.

Top with rhubarb; sprinkle with gelatin.

For topping:

In a small bowl, combine sugar and flour. Cut in butter until mix resembles coarse crumbs.

Sprinkle over top of rhubarb.

Bake at 375º for 35-40 minutes or until lightly browned.

Cool on a wire rack.

Cut into bars.
