"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
4 lb Pork Loin
¼ c. Olive Oil
1 tsp. Garlic Powder
1 tsp. Onion Powder
½ tsp. Smoked Paprika
1 tsp. Dijon Mustard
2 T. fresh squeezed lemon juice
1 T. honey

Directions:
Directions:
Rub pork loin with cooking oil and lightly salt all sides of the pork. Mix seasonings together and liberally rub all sides of the pork roast.

Set gas grill burner on far side of the grill to medium heat and place pork roast on the opposite side of the grill. Adjust grill temperature to be near 325º. (Use a grill thermometer, don't trust the one built into the cover)

Rotate pork roast every 15-30 minutes to ensure each side cooks evenly. Pork loin is done when the internal temperature reaches 145 degrees, approximately 1 hour and 45 minutes.

Remove from grill and let rest for 10 minutes. Then slice and serve.

Personal Notes:
Easy and tasty!

This works for pork tenderloin too. Rub, place in a zip-lock bag, marinate for about an hour or so before grilling. Grill on direct medium heat 5 to 7 minutes, flip and grill another 5 minutes. Move to indirect heat for 5 to 7 minutes.
